Which Whey Is Which

Most of us remember from the nursery rhyme that milk proteins divide into curds (essential for cheese production) and whey. Whey powders are made by separating whey protein from the milk fat and milk sugar, before pasteurizing and then drying liquid whey.

Which whey is which?
Different forms of whey protein depend on how much it’s been filtered, separated or isolated from the milk fat and milk sugar. Whey Protein Concentrate results from one filtration process that sifts out or ‘concentrates’ the larger protein molecules, resulting in a ‘concentrated’ form of whey protein, typically 80% protein, but still containing some milk fat and carbohydrate.

If whey is micro filtered again through a smaller, finer filter or if it’s ion exchanged, the whey is almost 100% isolated from the fat and carbohydrate, so Whey Protein Isolate is fat free, lactose free, and THE purest whey available, typically 90% protein, with fewest calories per serving; but more costly than the Concentrate. Its short chains and peptides make it available for absorption within 10 minutes of ingestioin, making it ideal for post work-out recovery.

A Whey Protein Blend is a mixture of Isolate and Concentrate. It’s lower in fat and calories than Concentrate, but, unlike the Isolate, still contains some carbohydrate and milk fat, and is value priced.

All whey proteins are gluten free and contain no trans-fats.

Which whey and Why?

With the possible exception of the stirred bead reactor system, ion exchange damages the best health promoting bio active fractions, creating a protein with distorted concentrations of the least desirable, most allergenic subfractions. Ion exchanged Isolates sacrifice bio activity for protein quantity.
