It’s Fall. Morning is getting colder. Being inside is getting cozier. Here’s a recipe for Protein Pumpkin Pancakes that will start your day with a ymmmmmmmmmmm.

Combine pancake mix, Splenda, baking powder, pumpkin pie spice and salt in large bowl.
Combine milk, pumpkin, egg, protein powder and vegetable oil in small bowl; mix well. Add to other mixture. Stir just until moistened; batter may be lumpy. Heat griddle or skillet over medium heat; brush lightly with canola oil. Pour ¼ cup batter onto hot griddle; cook until bubbles begin to burst. Turn and continue cooking 1 – 2 minutes. Repeat with remaining batter. Pour on 100 % natural maple syrup if you dare. Serves 8
