Casein is derived from skim milk by a process that separates the casein protein from the whey protein. The casein fraction is precipitated and the whey fraction is removed for further processing as described elsewhere.

The precipitated casein is purified to remove most of the remaining lactose, fat and milk minerals. The resulting casein is treated with a calcium salt to improve it’s solubility in liquids. While casein protein contains all the essential amino acids, as does whey protein, it is a slower digesting protein than whey because of it’s molecular structure. This significant difference from whey means that casein protein is released into the blood stream at a slower rate than whey protein thus giving the effect of “sustained release”. This slow release characteristic means that casein can be incorporated into the daily protein diet to ensure that muscle tissue has a continuous supply of amino acids even when whey protein is not available. This is particularly relevant at night where consuming casein protein before bedtime can slow down the onset of the catabolic state (muscle breakdown). The product mixes in a shaker for easy use.
